Summer salad bowl – Bjork & Berries GB
Summer salad bowl

Here you have a beautiful salad bowl to kick start the summer.

In this recipe, I have included different veggies and fruit, depending on the season.

Yes, tomato is a fruit as is peach, and paprika is a nightshade veggie. Tomato is classified both as a fruit and nightshade. Tomatoes are botanically fruits because they come from a flower and contain seeds.

5 leaves of little gem salad or another leafy version
1/2 paprika or tomato or summer peach, depending on the season
1/2 lemon for juice
pinch of salt
1 tbs rapeseed oil
1 tbs of roasted sunflower seeds
3 pansies or other flower or herb

Wash the green leaves, fruit and veggies. Squeeze the juice from the lemon, I cut it in half and stick a fork in the middle of the fruit, wriggle the fork around until all the liquid is in the bowl.
Add salt and oil; this is another trick, dressing in the bottom, and don't turn the salad until serving. The mixture won't drop and sag, instead stay crisp and tasty.
Place the lettuce in the bowl on top of the dressing, chop the rest of the veggies into bite-size or nibble size pieces. Get it all in there, top of with the seeds and flowers/herbs.
I love to scoop a lettuce leaf from the bowl with my hands, get some of the good bits in it, with the dressing and finish of the whole thing off with my hands.
